It is one of the famous kebab dishes of Bursa region. It started to be cooked in 1867 in Kayha-Bazaar. Although its basic ingredient is döner kebab, what makes the “Iskender” is the butter on it, tomato sauce, yogurt next to it and pieces of oily pita bread underneath. Unlike Iskender lamb which is made from mutton mostly, beef is used in kebab shops in Istanbul.
The people of Istanbul prefer meat more probably because of the kebab culture they are used to.
